Cut the mutton or lamb into cubes no more than one inch thick. Peel and slice the potatoes,carrots and onions. Reserve 1lb of the potatoes, leaving them in salted water. Arrange in the casserole a layer of potatoes then meat,carrots, then onion, then potatoes, then more meat,then carrots, then onion and finally a layer of potato, seasoning as you go.
Pour in the water or stock and cover with a lid. Cook in a slow oven for two hours. Half an hour before the end of the cooking time, add the remaining slices of potato. Serve hot. |
